Oh the JOY!
Today I added SCALLOPS to my menu! I am loving the soft food phase! I was a little worried about them because “Tiny Tummy” wasn’t sure how she felt about tuna!
Scallops are expensive! But I’m eating so little that I could justify the cost. I got a 24 count frozen bag at Trader Joe’s for $17.99.
Scallops are HIGH in protein and I am working on only having one protein shake a day.
I prepared them very simple since we can’t do much spice during this soft food phase.
How I Prepared Them:
Prep 4 scallops, wash and pat them dry, 1 tablespoon of virgin olive oil, one small sliver of butter, salt and pepper!
Put the oil and butter in a small nonstick pan over medium high heat. Once hot place the seasoned scallops in the pan, sear each side about 2 min (depends on size) they need to be opaque. But don’t over cook or they will turn out like rubber. Watch them closely.
Remove to a plate then make sure you measure your portion. You may only be able to eat one ounce at first because they are dense. Just take your time and let your tummy guide you! I could do 1.5 ounces.
I paired it with some very soft cauliflower!
It was delicious!
